Sauerkraut is cooked in a sweet vinegar bath with onion, celery, bell pepper and pimento. Just after it comes to a boil, the pan is slipped from the heat and the sauerkraut mixture is left to marinate over night.

As a change from mayonnaise-laden slaw, I created this refreshing alternative. It uses many of the garden vegetables I grow, so its also economical. I serve it at our family reunion each Fourth of July, and its always a big hit at church socials.

I found this recipe in a local newspaper when we moved to Arkansas almost 20 years ago. The recipe was said to be so good that even people 'burned out' on turnips would like it. I'd never heard of slaw made from turnips, but I tried it and now my husband likes it better than cabbage slaw.
