These are very moist, tastey muffins! Usually I make muffin-shaped banana bread using a bread recipe from Fanny, but this had a better consistency. For the record, about 19 minutes is all I needed for mini-muffins, in case anyone's interested. The folks at work will be pleased, and I'm glad to have not wasted very ripe bananas!

Very good! This was my first time making muffins. I used peanut butter chips instead of the nuts, and I think next time I might add a little more banana. Great recipe!

This is a great recipe. The kid's and hubby cannot keep their hands off! I did a double recipe and substituted half the white surgar with brown sugar. It still turned out awesome.

Followed the recipe exactly and they came out perfect. The coconut was a nice touch, it gave just a little bit more texture and I really liked it. Hot from the oven and with a little butter... mmmmmmm. My family loved them. I might try them with some mini chocolate chips to make them special for my kids.

I thought it was pretty good, my husband thought it was dry. I read all the reviews, the only changes I made was instead of 1 cup sugar, I used 1/4 cup of white sugar and 1/4 of light brown sugar and 1 teaspoon of vanilla. I definitely will make it again and add alittle applesauce to the batter. I didn't want muffins so I made it in a 9x5 loaf pan, cooked it for 1 hour on 350 and it came out perfect!

Very good basic recipe that I will keep using! Like others, I changed it a bit. Used unsweetened apple sauce instead of oil. Used 1/2 brown sugar, 1/2 white sugar. Added 1 tsp vanilla to wet ingredients and 1 tsp cinnamon to dry ingredients. Added both chopped pecans and coconut. Baked at 325 for 20-25 minutes. The part that tied it all together for the WOW factor was frosting these babies with homemade coconut cream cheese frosting: creamed 6 oz lower fat cream cheese softened to room temp with 1 tsp vanilla. Beat in 2 cups confectioners sugar. Stirred in 1 cup coconut. Topped the warm muffins with this stuff and it was delicious!

Perfect! I made 6 muffins in the jumbo muffin tin. Watch the baking time carefully. I baked for 28 minutes but 25 minutes would have been perfect.

Very Banana tasting, added the coconut instead of the nuts. Good texture. Next time will add a pinch of baking powder, and a little less sugar.

This recipe is AWESOME! I had two variations... 1)I used 4 bananas...I needed to use them! 2) I added vanilla! I went to the store to pick up more when I ran out and then realized that I didn't need them. So I used it anyway! I plan to use this version, the regular version and some of the other versions too! It was great!

These were yummy. I didn't have nuts but I did add a half a granny smith apple and a scoop of protein powder. I sprinkled cinnamon sugar on top. I served them with butter, strawberry jam and peanut butter. My son liked them with peanut butter best. Watch the time...my muffins were done right around the twenty minute mark. This recipe is a keeper.

This is a great recipe, however, I used 1/2 cup of sugar instead of the recommended 1 cup. I also used very ripe bananas. The banana nut muffins turned out great!
