This was a great starter recipe. I followed it...sort of. I read some other reviews that said it was too sweet so I did 1/4 cup white sure and 1/4 cup brown sugar. Then to make it low fat I did 1/4 cup veg oil and 1/4 cup applesauce. I also added a couple dashes of cinnamon for some added spice :) These were dense but I think banana muffins or bread will always be this way. Great recipe and will make it again.

Simple and easy recipe. Nothing new or unique but delicious and a good snack for the kiddos when they come home from school. Cook time is FAR too long, but if you are using the method of pulling out a clean tooth pick, then you'll know just when they're done. Maybe 25-30 min in a standard oven. In my convection oven, I baked 22 minutes.

These muffings are fantastic. I use splenda sweetner in place of sugar and you can't tell at all. They are soft but not super crumbly so easy to take on the go!

I only baked them for 25 min., based on other reviews, and they turned out perfect. Would be good with chocolate chips, too. Kids loved them!

I made this recipe the other night while dinner was in the oven. It was so quick to put together. I was looking for a dairy free banana muffin recipe. So glad I found this one! My daughter said the muffins were better than my usual ones. I followed the advice of other reviewers and added 1 tsp. of vanilla and 1/2 tsp. cinnamon. Thanks, Sarah, for a great recipe!

Followed exactly except added 1 tsp vanilla. Bake beautifully, YUM!!!! Made these again this morning...same results. My favorite part of this recipe is all ingredients are in pantry, and comes together very quickly with 2 bowls, no mixer!

These were absolutely wonderful! I took FLEUR-DE-LYS's advice and changed the sugar to 3/4 cup, added 1/2 tsp vanilla and a little more than a pinch of cinnamon and they turned out wonderfully! They were subtly sweet, but not overly so. Also I kicked the temperature down to 325 as ORF2B and baked for 30 mins even and they were ready on the dot. I also added a few chopped walnuts to the top of the muffins before baking for texture and looks. Thank you to Sarah, as well as the reviewers. Perfection!

This is a great recipe for moist banana muffins. Instead of walnuts, I used about 1/2 cup of regular chocolate chips. I also added 1 tsp vanilla. They didn't need to be in the oven for the full 30 minutes - I took them out after about 25, and they were done. I am definitely going to use this recipe again. Thanks for sharing!

I didn't add any coconut and these muffins were fantastic. They looked good and tasted good! On top of that they were really easy to make. I might try to add some cinnamon next time because I think that might be yummy too.

Very good texture, my kids love them. My eggs are small so I added two eggs instead of one, and I added a teaspoon of vanilla extract, no nuts because my kids don't like them and reduced the sugar to 3/4 of a cup, the muffins were done within 35 min. I like that the muffins are not greasy and heavy like some others recipes I found online. Will do this one again next time I have leftover bananas.

These were very easy and so good! I used 3/4 cup of sugar, substituted softened butter for the oil and salt, and doubled the walnuts. They were done baking in about 24 minutes. Wonderful!

Very good, inexpensive to make and produces a lot of cute little cup cakes. I used 1 cup of brown sugar and half butter/half evoo, because these were the things that I have in my house at all times. Added 1 tsp of pure vanilla extract for fuller flavor. I loved that I didn't have to add heavy cream or anything like that, as other recipes I've seen in the past have asked. Great!

very very good! my husband ate half the pan! they were very thick and rich. tasted just like banana bread. followed the recipie almost exactly. the only change i made was to add a little cinnamon and vanilla. plus 1/4 cup milk as the batter was very thick! so good, thanks!
