Ingredients

  • 1 yellow onion, chopped
  • 4 cloves garlic, minced
  • 1/2 pound cubed beef stew meat
  • 3 ounces tomato paste
  • 1 (28 ounce) can crushed tomatoes
  • 1 pinch dried parsley
  • 1 pinch dried basil
  • 1 pinch fennel seed
  • salt and pepper to taste

Directions

  1. Put a small amount of olive oil in a large saucepan and saute onions and garlic until caramelized. Add stew meat and cook well, then tomato paste until paste has browned. Mix in the crushed tomatoes, and season with parsley, basil, fennel, salt and pepper. Simmer 6 to 7 hours, stirring occasionally.

I grew up with this same type of sauce,made by my grandmother its great,I think pork works...
