I made this the other night for my boyfriend and I - we LOVED it! We also put a little bit of sour cream on top. The leftovers are just as good as when it is freshly made. I can't wait to make it again!! :-)

This recipe turned out great and was so easy! My husband did not like it as much as I did though. I cooked up some brown rice separate and served the salsa chicken over top of the rice and then sprinkled cheddar cheese on top. To make the chicken sauc, I first sauteed half of a medium onion in some butter and then I added the chicken cubes. I cooked the chicken in salt and pepper, and then squirted lime juice on top to give it some zing. Then I added a whole 16 oz tub fresh summer salsa and let it simmer with the chicken until it reduced a bit. Then I added 1/2 cup of sour cream to make it a cream sauce. I served it over the brown rice then added cheese. I think next time I will go ahead and mix it with the rice. I think this would make an excellent filling for tacos or burritos! Thanks for the recipe, it gave me some great ideas and I will DEFINATELY make this again!!!

This recipe was very very good! My family loved it. I used brown rice that I had already cooked the day before and made my own salsa. The cheese on top really finished it off perfectly. Thanks for the recipe!

Yum! I added a can of corn like everyone said to do and thought it was great. It makes it stretch for a bigger family too. The thing about this recipe is that it is super easy!

My MIL cans salsa in the fall. This recipe helps me make use of all the salsa we get! You can only eat so many chips you know!

I made this last sunday for lunch, it was great! I made a few changes: I didn't have instant rice, so I cooked 1 cup of jasmine rice in the microwave in 2 cups of canned chicken broth. While that was cooking, I browned 4 chicken tenderloins, that I had diced, in olive oil, then added 3 crushed garlic cloves. I added the rice to the chicken, poured 1/2 cup of broth, added salsa, then simmered on low. I used mozzerella cheese, I didn't have any cheddar on hand, and though the flavor was mild, it was still very good, hubby loved it! Will make againa and again, thanks!

I thought this was a very good recipe - quick, easy and diet friendly when I used fat free cheese. I omitted the chicken broth and cooked brown rice separately, then mixed together to serve. We rolled the leftovers in fat free flour tortillas and loved those too. Thanks for a great recipe!

Bit disappointed because I usually like this type of dish better. It was pretty decent, but nothing spectacular. And frankly, if I have to "jazz it up" as everyone has suggested, then I believe it's everyone else's recipe, and I'm rating *this* one. I didn't think it was too much rice though. :-) I'd probably make it again but not often.

This was delicious for what it is; a quick simple meal. Based on other reviews I cut the rice. I only used 1 c, but the mixture came out too soupy, so I would suggest 1 1/2 c. Great with a side of guacamole and tortilla.

This recipe was excellent! My whole family enjoyed it very much. I took the advice of others and added a can of corn and a can of mushrooms and it tasted wonderful. Next time I'll try making it with black beans.
