Really good and quick meal. I would agree with everyone that suggested adding another egg. Also in my version, I added a layer of canned scalloped/sliced potatoes. It was very fulfilling.

This is the easiest quiche recipe! I used 7 eggs and made 2. I also added some parsley.YUMM!

This was so easy, and so tasty! I did use the whole pound of sausage, and therefore added an egg. This was simple and well-liked. I served it for dinner, and leftovers made a tasty breakfast.

Easy and flexible. I made it with various types of meat, various vegetables added to the meat or as a substitute...and I tried all different types of salsas. I would recommend using 5-6 eggs, cutting back on the cheese & cooking a bit longer, as others have done.

I am still amazed at how good this was. I added one can of rinsed black beans and used 1 lb of hot pork sausage. Also, added 1 more egg as suggested and added spices to the egg mixture such as cumin, cayenne and garlic powder. This was excellent and still great the next morning reheated!

Great recipe. I made it for a morning in for moms, and everyone raved about it, and kept going back for more! I didn't do crust, and really greased muffin pans so to make them individual.

I was surprised at how thin this turned out--it was only about halfway up the pan. Perhaps it would've been different in a pie pan? I used my quiche pan. I used black bean and corn salsa, so it tasted a bit burrito like, but it was good for dinner. I used the cheesy quiche crust on here and it was good with it. Thanks for the recipe!
