I really like this recipe. I think it is easy to adapt to what you have in your cupboards. Today I am going to make it with spanish rice and a little more chicken. I don't have any cream of chicken so I will use cheddar cheese soup and cream of mushroom. I will be able to cut out some of the shredded cheese that way. And I haven't decided on salsa or canned rotel tomatoes. I haven't used salsa in this recipe yet. I always always always season the chicken. I chop it up before I cook it and then cook it in a skillet with some onions and whatever spices tickle my fancy. A lot of people have been saying it is bland, it is probably because there really isn't any actual seasonings in it. I really like the thought of eating it with taco shells or wrapped in a tortilla as a burrito. I think that is how we will eat the left overs. :) Happy Eating!!!

We've been making a version of this for years and love it! I only use cream of mushroom soup in mine. Also, for a quick week night meal, I use rotisserie chicken.

Excellent recipe! We enjoy spicy food so while cooking rice I added 1/4cup of hot sauce and 2 tbsp of chili powder to the water. Night before marinated chicken in a chipotle sauce then baked the next morning, and threw it all together. Served with sour cream. Huge hit!! Thanks!!!

Easy recipe, good flavor. I baked my chicken in the oven first. I used just 1 cup rice, 2 cups water. When the rice was almost finished I added the chopped onion so it would soften. I used 1 can rotel and the rest salsa. Mixed them with the other canned ingredients then layered per the directions. I used 1/2 the amount of cheese the recipe called for and it was still great. Next time I will try all salsa instead of substituting the rotel.

We loved this. I used 1 can tomato soup, try to get low sodium. Great stuffing for burritos/enchilades. Makes alot.

This was very good. I used 2 cans of cream of chicken instead of the mushroom, a green salsa, and shredded rotisserie chicken to make the cook time a little faster

Definately not bursting with "sass". Boring. Nothing special. I mixed everything together instead of layering the rice and stuff, and I highly doubt that would have made any difference. Eatible, but will not make again.

Very tasty and everyone ate seconds. As others suggested, I halved the cheese & used reduced fat soups. Next time I will just use 1/2 onion. I agree, would be a great potluck dish. Will make again, thanks for sharing.

This recipe was SO good. Be really careful when choosing salsa because the heat on the one I chose was a bit much for my kids, but overall WE LOVED this one. I will for sure be making this again.
