Hubby is not a casserole type guy, but he actually liked it! He even remarked about how good it was (again) when we had it for left overs two days later! I liked it because it was quick and easy. I took others suggestions and just threw everything together before putting remaining cheese on top. Covered and placed in oven. Removed cover last 10 min. Wonderful. Thanks!

I just made this recipe last night, and my family loved it. I found the recipe to be very simple, and I actually did have most of the ingrediants in my pantry. I also used rotel vs the salsa, and salted and peppered each layer.

My family really enjoyed this recipe a lot. I did modify it a little bit. I used Colby & Monterey Jack cheese instead of the Monterey Jack since it was already preshredded at the store. I also used hot salsa because it was what I had on hand, and I used 1 Tbsp dried minced onion instead of the fresh onion. I also combined all the ingredients instead of layering it except for half the cheese which I put on top. I will definitely be making this one again! Thanks for the recipe!

My family loved this recipe. I did modify a bit after reading reviews. I used rotel instead of salsa; browned the chicken with onions and garlic; combined the cheese, soups and rotel; and used instant rice because that's what I had on hand. My family told me that they definitely want this again. Even better as leftovers.

My family absolutely loved this dish. I didn't have cream of chicken, so I substituted a can of cream of celery, and added a little chicken soup base just to add the chicken flavor. I also pretty much doubled the cheese, but it was a huge hit with the kids!

Delicious comfort food at it's best. I didn't find a need to change this recipe, beyond browning the chicken instead of boiling it (ick!). It's not something I'd make every day, but sometimes, you just need a good, hearty casserole to make the day go away. :D

Pretty good, according to my daughter. I didn't use all of the rice, as it seemed to be too much, nor did I use all of the cheese - 4 cups of cheese means 1/2 a cup per serving. Even with the reduced amount of cheese, the top of the casserole looked greasy.

Loved the flavors of this dish but I found it pretty watery. I made my own cream of chicken & mushroom soups (I have celiac so I need a gluten-free option). Try to go for a good quality salsa to avoid the watery bottom (or just a slotted spoon!). Either way--YUM!

I thought this casserole was average. I did follow some of the suggestions made by others and made a few changes that i think improved it. Rather then boil the chicken i sauted it with some salsa and the onions and sprinkled it with some taco seasoning. I only used 1 can of cream of chicken soup and added a little extra salsa to the soup mixture. I dont think this is something that i would make again soon...it was okay, but is not worthy of 5 stars.

this was really easy. i did however do it a little different and it turned out great. i eliminated the cream of mushroom soup and only used 1 can of cream of chicken soup. i melted the cheese in the cream of chicken soup, then combined 2 cans rotel, 1 can southwest corn, onions, fresh garlic, and the rice. i then topped it with cheese and baked like that. my family loved it! it's definately an easy dish and a big hit.

Yum!!! Like others, I diced the chicken first and sautéed with the onion. Added the salsa and let is simmer and blend flavors. Added soups, rice,and poured into casserole dish. Used Colby Jack cheese slices over top and at the advice of another reviewer, sprinkled the top with crushed tortilla chips. YUM! DH suggested more chips next time and I'm thinking maybe a little corn and/or green beans (like in some spanish rice recipes!). I'm thinking since others complained it was bland, they didn't use a good salsa. Here on the West Coast, we have a brand of salsas called Herdez, I used the medium heat. Thanks for sharing your recipe!!!

This was delicious. Super easy and simple to make. I cooked the chicken with chicken fajita seasoning and put the casserole together on the weekend. Then one evening during the next week I popped it in the oven for about 45 min. and it was ready to go. I also used my own homemade salsa recipe as I don't like store boughts, so they sure helped the flavor as well. Will definitely make again and again. Thanks!

I thought this recipe was almost perfect as is. My husband loved it and he's picky.. so i'm happy. I did brown chicken strips as I don't care for boiled chicken. And I used low sodium soups. I topped it off with sour cream when serving. Excellent!!
