I used half the amount of cheese that the recipe called for and I added a can of black beans. I didn't bother to layer it, just mixed it all together and baked it.

I sauteed the chicken and onion together. Added some minced garlic as well. No one was crazy about it in my family. Might be good wrapped in a burrito. Might do that with leftovers. Won't make again.

This is not fantastic but its easy, fast, & filling. Here are the changes I made...I added 1/2 cup of sour cream, used cheddar cheese soup, only added 1 cup of salsa, & used only 1 & 3/4 cups of monterey blend shredded cheese.

The base is good, but some tweaks here and there would make it much better. I would saute the onions before adding to the casserole; also, a touch of some sort of spice like cumin can go a long way in a dish like this. I sprinkled some tortilla chips on top for a nice crunch.

This is requested in my house often. I have made it many times. The only thing I changed is not using 1 whole onion. The salsa we use has onion in it, so adding another onion made it too much for our taste. Other than that we love it! As I said we make it often. Thanks!

Two things! First I cooked the rice with Wyler’s chicken granules added to the water. Second…I never would fix the chicken that way. It is so much quicker to cut the chicken into chunks first and then parboil it. (However I did not even do that, I cooked it in with the onions and other things :) while they were sautéing!) Very good, and I must also add very “adaptable”!

Delicious! I bought a rotisserie chicken, added a can of green chilis and used a mexican blend shredded cheese mix. Kids liked it so I will make again. The rice is a nice change from the recipes that use tortillas.

Our large family (14 of us) love this recipe.. i have made it several different ways and its wonderful the original way but we also enjoy variety. on other occasions i have substituted picante instead of salsa with colby jack cheese and cheddar and have also added chipolte habeneros or jalepenos just under the top layer of cheese. It consistantly gets great raves and i have found that you can also use frozen precooked grilled chicken breast already chopped up, or rotissier chicken deboned to make it faster to prepare. i have made it with ground turkey seasoned with taco seasonings. i top it off with sour cream when serving and it has become the new family favorite having it at least two to three times a month in one of its many variations. thank you so much for this recipe. you turned whats for dinner into a question i dont mind answering!

I omitted the can of mushroom soup, and used only one Healthy Request Cream of Chicken soup. I also reduced the cheese by one cup and I added black beans. I also made with brown rice. My family really liked this meal and want it put on the menu again.

Thanks for this recipe, Gweneth. I sauteed the onion, along with a couple of stalks of celery and a green pepper. I also added some frozen corn. Loved it! Next time I make it, I'll throw in a can of black beans, too.

This was great. I followed a few suggestions from reviewers. The addition of black beans was terrific. I would use less onion next time but I would still add raw onion to the dish (rather than browning it) so the finished product tastes very fresh with that crisp onion flavor. I also browned diced chicken in olive oil with garlic, rather than boiling. I included crushed tortilla chips over top when serving and that really added a punch. Very filling and overall a hit!

Delicious! I made no changes except the way I prepared it (simmered chicken and onions in skillet with salsa to cook). I'm not a huge casserole fan, but this was DELICIOUS!

This was so unbelievably delicious! My boys couldn't stop eating it and neither could I!! My friends (and I)were puzzled that mixing cream of mushroom and salsa could make such a great dish. I also added black beans as I love them and they're a great source of protein and added some corn and grilled green pepper is well. I did use 2 Cups total of cheese as that seemed to be plenty. Thanks for this recipe, I will be making it frequently. It also makes a lot, which was great, because it was nice to have leftovers!

Used homemade salsa and it was delicious! I cut the dishes by cooking the onions and chicken together and then mixed all the ingredients together in the 9x13 dish

Very tasty recipe, even though not the healthiest! I added a little of Cholula's hot sauce to give it a little kick since we like spice in this house. Also, served it with a dollop of sour cream to balance the flavors. Was told by my boys that they would eat it every week!
