Mmmm, fantastic! I don't have a pressure cooker so I just pan-fried salmon steaks with olive oil, lemon juice, and some fish seasoning then topped them with the sauce. The mustard and spinach flavors marry with the salmon perfectly. This was a delicious, nutritious dinner that was on the table in 15 mins! Will most definitely make again. Thanks so much!

Mmm... so delicious! I'm sharing this recipe with other spinach/salmon lovers I know! As for the extra sauce, I had it the next morning on English muffin/scrambled egg sandwiches with a little Parmesan cheese sprinkled on top.

I would make this again...I do not have a pressure cooker. I pan fried on high heat (2 min each side) w/ some olive oil. I put the spinach on top of 4 fillets, covered, and let it rest for 5 min.(to heat the sauce) Hubby had 2nds!!!

The only possible change to this recipe is to purchase additional salmon so none of the spinach sauce is wasted.

For my taste, a little bit too much lemon flavor in the spinach sauce. I will make this again but will probably use half the amount of lemon juice.
