2 cups chopped seedless watermelon
1 1/2 cups cubed fresh pineapple
1/3 cup chopped sweet red pepper
1/4 cup chopped green onions
1/4 cup minced fresh cilantro
1/4 cup orange juice
1/4 cup lime juice
1 teaspoon chopped jalapeno pepper
1/2 teaspoon salt, divided
1/4 teaspoon pepper, divided
4 (6 ounce) salmon fillets

DIRECTIONS
For salsa, in a large bowl, combine the first eight ingredients; add 1/4 teaspoon salt and 1/8 teaspoon pepper. Let stand at room temperature for at least 30 minutes.
Coat grill rack with nonstick cooking spray before starting the grill. Sprinkle salmon with remaining salt and pepper. Place on grill rack. Grill, covered, over medium heat for 5 minutes. Turn and grill 7-9 minutes longer or until fish flakes easily with a fork. Serve the salsa with a slotted spoon with salmon.
FOOTNOTES
When cutting or seeding hot peppers, use rubber or plastic gloves to protect your hands. Avoid touching your face.
Nutritional Analysis: 1 fillet with 1 cup salsa equals 381 calories, 19 g fat (4 g saturated fat), 100 mg cholesterol, 399 mg sodium, 17 g carbohydrate, 2 g fiber, 35 g protein.

I made this for my boyfriend and we both LOVED it! I added a few strawberries and used a little extra japaleno pepper and it was perfect! Even saved the leftover salsa to try on chicken!!

I really liked the recipe, but somehow it seemed to me that something was missing in the salsa. Can't quite figure out what it is - maybe I'll try some cilantro next time. I might try red onions instead of regular as well. But it did have a great flavor and we really enjoyed it. Thanks for sharing!
