INGREDIENTS (Nutrition)

  • 1 tablespoon Lucerne Sweet Cream Butter
  • 3/4 cup finely chopped leeks (white part only)
  • 3 tablespoons flour
  • 1 (14.5 ounce) can Safeway O Organics Chicken Broth
  • 2 cooked potatoes, diced
  • 1 cup frozen Safeway SELECT Petite Cut Corn
  • 2 tablespoons dry sherry
  • 1/8 teaspoon cayenne
  • 1 1/2 cups Lucerne Half-and-Half
  • 1 2/3 cups cooked salmon, skin removed, broken into bite-size pieces

DIRECTIONS

  1. In a 5- to 6-quart pan, melt butter over medium-low heat. Add leeks and cook about 7 minutes until soft. Stir in flour and cook for 1 minute. Whisk in broth and cook, stirring, until mixture begins to boil and thicken, about 5 minutes.
  2. Add potatoes, corn, sherry, onion powder, and cayenne; cook 5 minutes.
  3. Stir in half-and-half and salmon pieces. Heat until warmed through, about 3 minutes. Do not let chowder boil or it will separate and become grainy.
