Ingredients

  • 1 (7 ounce) can salmon, drained, bones and skin removed
  • 4 cups soft bread crumbs
  • 1/2 cup chopped celery
  • 1/2 cup chopped green pepper
  • 1/4 cup chopped onion
  • 1 tablespoon minced fresh parsley
  • 3/4 cup fat-free milk
  • 1 tablespoon reduced-fat mayonnaise
  • 1 teaspoon ground mustard
  • 1/4 teaspoon pepper
  • 1 tablespoon grated Parmesan cheese
  • 1/4 teaspoon paprika

Directions

  1. In a large bowl, combine the salmon, bread crumbs, celery, green pepper, onion and parsley. In a small bowl, combine the milk, mayonnaise, mustard and pepper. Pour over salmon mixture; toss to coat evenly.
  2. Transfer to a 1-qt. baking dish coated with nonstick cooking spray. Sprinkle with Parmesan cheese and paprika. Bake, uncovered, at 350 degrees F for 30-35 minutes or until heated through and top is golden brown.
