Salmon Cakes with Orange Couscous

Ingredients

  • 1/2 cup couscous
  • 3/4 cup orange juice
  • 1 (14.75 ounce) can red salmon, drained, broken up
  • 1 (10 ounce) box frozen chopped spinach - thawed, drained and squeezed dry
  • 1 egg, beaten
  • 2 cloves garlic, crushed
  • 2 teaspoons ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 3 tablespoons olive oil

Directions

  1. Prepare couscous according to package directions replacing the water with the orange juice.
  2. In a bowl, combine the cooked couscous, salmon, spinach, egg, garlic, cumin, salt and black pepper. Form into 4 patties.
  3. Heat oil in a large skillet over medium heat, add patties, fry each side until golden brown, about 6 to 8 minutes.
