This was delicious! But, I need more onion! i used a whole onion and I cooked it in some olive oil first. It was delicious!! I also used plain lowfat yogurt instead of sour cream, cuz that was all I had, AND I used half as much lowfat spread instead of butter to save fat and calories. But did I mention it is delicious!!

These were incredible. My 10-year old actually ate and enjoyed spinach! The only things that I changed about the recipe were that I diced the onion instead of chopping and I chose not to use the cheese. The potatoes are great by themselves without the cheese, so why add the extra calories? This recipe is a keeper. The left-overs were great, too! Thank you so much for sharing this recipe. Another person had suggested leaving out the dillweed, but I think it should stay. The only changes that I will try in the future is to add either some crumbled bacon or shaved ham.

These turned out pretty good, though I am not sure I would make again since it took a bit long for an end result that was not anything too special. The only changes I made were using dried onion and not peeling the potatoes so maybe that made a difference.

Awesome bliss. Only personal adjustments were to delete the cheese (wanted a more "gourmet" appearance than gooey cheese would have offered) and added slices of four fresh basil leaves. Perfection; and requests for recipe from all in attendance! A definite keeper! Thanks for sharing.

I took a shortcut and used a box of Betty Crocker Instant Roasted Garlic mashed potatoes; also stirred the cheese into the mixture. Everyone loved it so there were no leftovers.

I REALLY liked this and I can see myself making it often, especially for special occasions (Thanksgiving, etc). I did make a few changes -- I reduced the amount of butter by half (& added an extra half-teaspoon of salt to compensate), plus a half-teaspoon or so of black pepper, and a pinch of nutmeg. I also used low-fat sour cream and about half the amount of cheese. Next time I'd like to try a different cheese, perhaps Gruyere... mmmm. I might try grating the onion next time instead of chopping it, and I might also double the spinach and reduce the potatoes a bit. I love recipes like this in which one can make endless variations!

This was very good. The only thing I changed was to use fresh spinach, lowfat sour cream and fresh dill. I made this as a side to christined's Best Ever Brisket. I will be making this again.

WOW! IS THIS TO DIE FOR. I DID MAKE A FEW CHANGES AFTER READING SOME OF THE REVIEWS. I LEFT OUT THE CHEESE, DILL AND SUBSTITUTED GREEN ONIONS FOR REGULAR ONIONS, AND USED FRESH SPINACH SAUTEED WITH BUTTER AND ROASTED GARLIC. I HAVE FINALLY FOUND A NEW WAY TO SERVE BORING POTATOES. I WOULD HIGHLY RECOMMEND THIS DISH TO ANYONE WHO WOULD LIKE TO TRY SOMETHING DIFFERENT FROM THE SAME OLD MASHED POTATOES. THANK YOU, THANK YOU

Who would have thought that something with this much spinach could taste so good?!?! I used a whole package of spinach, even though it looked like a lot, 7 medium sized potatoes, 1/2 cup butter 1 small container of sour cream. 2 chopped green onions, 2 cloves garlic. I chose not to put any dill in it. I had no cheddar, so I put 4 Kraft singles on top, covered with some crumbled goat feta, and baked at 400 for about 30 minutes along with a huge fillet of salmon. Absolutely amazing and everyone loved it!

This is so yummy! I also didn't peel my potatoes. To make it a little more healthy, I used just enough sour cream and butter to make the mixture creamy. I will definitely make this recipe again!

Simply divine. Used red potatoes (didn't peel them) and a fresh bunch of spinach. Sauteed medium chopped onion in butter till tender, added spinach and cooked just till wilted. Added minced garlic to the potatoes while boiling which game them a deep, savory garlic flavor.. Mixed in quite of bit of shredded Longhorn cheddar as well as some on top. Oh, and I wouldn't skip the dill--the dill gives it quite an extraordinary unique kick. This is definitely a keeper!

YUMMMMM-EE! This recipe combined so many of my favorite things...mashed potatoes, spinach, CHEESE and sour cream! They were easy to boot. I used fresh spinach because that's what I had - nuke in the micro for a few and ready to add. This is a definite keeper!

If food is love, then I have a big fat crush on Sally's Spinach Mashed Potatoes! These were so yummy and comforting. I used leftover garlic mashed potatoes (which saved a bunch of time) and thawed/squeezed dry frozen spinach. I didn't top the dish with cheese, but I put plenty of cheddar in the mix before I baked it. I froze part of the UNCOOKED mixture for later. I figure I can put it in a casserole dish and bake it on the fly when I'm in the mood. Which, is probably gonna be pretty soon, because I loved this dish!

Used fresh spinach, and left out the sour cream and dill. Added bacon crumbled. Awesome! The bacon in it wasn't as good when we had the leftovers though. It got kind of soggy- yuck. But just after you make it the taste was delicious!

this was pretty good. i used canned spinach and fresh dill. i probably wont use dill at all next time. i like the idea of adding roasted garlic and bacon though!

Ok...I did change this up a bit. I left out the butter, sour cream and dillweed. Instead of regular onion, I used green onions and I added oven roasted garlic and crumbled bacon. It was very delicious!
