This is a delicious green plantain, beef, and tomato hash recipe that my sister brought back from Costa Rica. It's best served as a vegetable or on a hot tortilla as a boca.

A staple dish in Matamoros, Mexico, this simple recipe starts with ground beef mixed with spices that you already have in your kitchen and turns into a great family dinner! Perfect to 'make ahead' on busy days. Serve with warm corn or flour tortillas, Spanish rice, and beans-a-la-charra.

I love this tangy, sweet salad dressing! Great on any green salad, but especially good on a salad of mixed greens, dried cranberries, and toasted walnuts with just a little feta cheese.

This easy shrimp salad contains no lettuce. It's perfect for barbeques or as a 'change of pace' dinner side dish. Customize this recipe with your favorite salad dressing in place of the lime juice. The lime gives it a tiny tangy kick.

No mayonnaise in this robust potato salad, but you 'll love the taste variety. The dressing is the secret. Warm potatoes are tossed with a vinaigrette whipped up with oil, beef consume and tarragon vinegar. Makes four generous servings.

Salsa De Tomatillo

This is the 'salsa de tomatillo' that I grew up with. It can be used as a sauce for grilled chicken, fish or shrimp, as the basis for green chilaquiles (pour over tortilla chips, shredded cooked chicken and shredded Monterey Jack, then heat under the broiler), and as a dipping sauce for chips. Delicioso!

This is a really good hot potato salad that my mother used to make for us. You can vary the amount of vinegar and sugar to change the taste around.
