Not at all what I expected...I didn't read the recipe before making it and was thinking the eggs would be hard boiled, making the dressing more like an 'egg salad' taste with mayo--heavy and a little sweet. It is not like that at all...it is very light!! This would be fantastic on fresh greens in the spring. It is also SUPER easy to throw together. I really liked it a lot and can see making this quite often---esp. come spring time. The reason I gave it 4 stars is that hubby said it was just 'okay'.

My husband and I have been trying to drop some pounds before my son's wedding and though we are supposed to be eating large amounts of veggies and greens, salad dressing is not on the menu. In searching for something that could work for a dressing, this caught my eye. Oh my gosh, delicious! I did make a few revisions as sugar is not in the plan and substituted stevia for the sugar. I also added a couple of drops of liquid smoke, 1 tsp mustard, a few red pepper flakes and a dash of garlic powder. It turned out absolutely wonderful. I am anxious to try it again as I see this as a wonderful, low fat, low sugar alternative to bottled dressing. It serves as a great base in which to add your favorite seasonings. One could cut down on sweetener for a more savory dressing. The temperature difference between hot dressing and cool crisp lettuce adds as well. I had hoped to see how this dressing would be on day two but it was GONE! I'll make a bigger batch next time. Thanks for sharing. Note: Watch the microwave. I over cooked it a bit and it looked a bit "scrambled". I ended up putting in the blender for a quick whip and all was fixed but without a blender or food processor handy it might not have been so easily salvaged.

My hubby and I had never heard of egg dressing before, so we decided to give this recipe a whirl. FABULOUS!!!!!! I used cider vinegar instead of regular vinegar (due to allergies) in the dressing and red boston lettuce, chopped up bacon, and thinly sliced green onions for the salad (since that's what I had on hand). If it's this amazing without the tomato and cucumber, I can't imagine how wonderful it would taste with them! Highly recommend!!
