This pretty potato salad has great flavor. Goes well with a summer barbeque, or anytime! For a tangy twist, try using plain fat-free yogurt in place of some or all of the sour cream. Garnish with additional sliced hard-boiled eggs, if desired. 

French Cafe Summer Salad

It is a fresh and colorful salad made with potatoes cabbage, peppers and corn in a tangy Dijon dressing. Full of flavor and loved everywhere I take it. Serve this cold on a hot summer day with a loaf of crusty bread and your favorite cheese.

An oregano/olive oil dressing with a dash of lemon makes this traditional salad just a bit different. All the veggies, including the Romaine, are chopped so when the salad is tossed, each bit of tomato or pepper, or cucumber gets its equal share of dressing. Six servings.

Bottled Italian salad dressing is dolled up with a bit of cumin and pepper sauce. Then it 's mixed into cooked strips of beef, red onion, kidney beans, and corn. Even better when tossed with salad greens and lots of shredded cheese.
