Delicious, a wonderful rainy day feel good soup. Hubby likes it thicker, more stew like - a couple tbs of minute tapioca made it perfect for him.

EXCELLENT! Even my hubby loved it, and he is not a fan of potato soup. The only things I changed were that I used green onion instead of leeks (to cut down on cost), and I used less butter and 1% milk to reduce the calorie count. Will definitely make this again!!!

A lovely soup and very filling, even my husband who does not like cream or milk based soups gave me praise for this one. My three year old dipped his bread in his soup until all the broth was gone, and then would eat small spoon fulls at my request which was a small success with a picky toddler! OK so everyone knows that its not really proper to change a recipe and then rate it BUT I had no choice. Having made a batch of lentil soup yesterday I was out of chicken broth, so used water and 3 boullion cubes. Didn't have leeks so used onion. Everything else was as written and this was very good. It has a mild flavor, using onion, but it's definitely tasty. I think that you could easily add ham or any kind of sausage that you would like, if you prefer some meat. The only prep change I made was to fist brown the mushrooms in the soup pot, why dirty another pan and waste the flavor, removed them and continued on. I REALLY want to try this with the leeks, I'll bet it is like 10***s with leeks. Thanks for the quick and tasty soup!

This soup is amazing; my family loves it. I didn't have leeks so I used celery, and substituted low-fat evaporated milk for the half-and-half. I also decreased the amount of butter used. I served it with a fresh, crusty French bread. It's a perfect freezin'-cold-day-outside comfort soup. The only problem is that there are not enough leftovers!

My kids turn their nose up at homemade soup usually, but they like this! I also used onion instead of leaks and a combo of sour cream and milk, turned out just right!

Delicious! I made a couple minor adjustments....used onions since I had no leeks, and olive oil instead of butter. So, so good and filling....I used baby bellas as my mushroom of choice. My kids really liked this one...thanks, will make again!

Excellent - no soup should be able to taste this good! Used red onions instead of leeks (didn't have them) & followed directions to the T - will make over & over! You've got to try this soup!

I don't review on here nearly as often as I should, but I did have to say what a delicious soup this is. I did use FF cream as that was all that I had on hand, and added a hearty pinch of tarragon - we thought the soup was rich and delicious, and made great leftovers. Will be making again soon - thanks!
