Ricotta Pie (Old Italian Recipe)

This is an old Italian recipe for a pie with a sweet crust--just like from the old country. My in-laws are Italian and they say that this is the best pie. It is always requested for Christmas. Mini chocolate bits and lemon rind can be mixed into the batter.

Lots of ricotta, eggs and sugar, and the perfect amount of chocolate go into this elegant pie. So, the filling is thick, rich, sweet and speckled with chocolate. It 's poured into a homemade crust, topped with a beautiful pastry lattice and baked until set.

Italian Ricotta Cheese Pie

The graham cracker crust on this heavenly pie is sweetened with honey. The filling is made with ricotta cheese, lots of eggs, and more honey. It 's studded with slivered lemon peel and almonds and topped with pumpkin seeds. Then this treat is baked, chilled and served to raves. 

Pineapple Chess Pie

There 's white cornmeal to add a bit of thickening, and lemon juice and crushed pineapple to give the egg custard filling a lovely texture and taste. This sweet and creamy filling is poured into a prepared pastry shell and baked until set and golden. Serve at room temperature. 

Vinegar Pie V

Lemon extract is added to the cooked and creamy vinegar custard just before it 's poured into the waiting crust, adding a wonderful taste treat to this old-fashioned pie. Then egg whites are whipped into a meringue that is piled on top of the filling before the pie is baked.

Eggs, ricotta cheese and cooked rice give this scrumptious pie a lovely texture. It 's also studded with candied orange and lemon rind, and topped with a beautiful lattice top. Makes a 10-inch deep-dish pie.

Pineapple and lemon are stirred into a simple custard filling that is then poured into a pastry shell, topped with a pretty lattice, and baked. Serve chilled with sliced strawberries. 

Ricotta Cheese Pie I

To make this pie 's creamy, delicately-flavored filling, combine eggs, ricotta, milk, vanilla, sugar and cornstarch, and then pour it into a prepared crust. Bake the pie for an hour until it 's set. Serve with sweetened, sliced strawberries.

Pat's Rose Apple Pie

Creating this beautiful pie is a labor of love, but the fabulous result is well worth the effort. A homemade pie shell is pre-baked. When cooled, a luscious pureed apple mixture is spooned in and covered with a spiral of apple slices that have been sugared, spiced and splashed with a smidgen of rum. The top of the pie is then decorated with pastry leaves and baked until the filling bubbles and the crust is golden.
