This is a great salad with lots of taste sensations - strawberries, mandarin oranges, red onions, and tomatoes. The poppy seed dressing is very different; it is made with honey, cherry juice, lemon juice, and mayonnaise. 

Midsummer Night's Salad

Fresh mint, salad greens, cucumber and a delicious mix of lemon and olive oil make this a wonderfully cool and refreshing salad for any time. This would be lovely on the side of an omelet for breakfast, or grilled fish at dinnertime.

This one is a salad that has a great combination of sweet and sour. It is great with chicken or any simple entree. I am always trying to make up new, crazy, salads and this one has been a work in process for 10 years. The fresh dill is not a necessity if you have a hard time finding it but if you do care to splurge on fresh herbs, it adds a great flavor!

For my wedding shower everyone brought a few recipes and this is one of my favorites. It is refreshing and pretty. This salad also travels well, just save the dressing and use it just before serving.

An excellent summer salad that can be altered to suit your liking. Other cheeses I have used include Cheddar and blue cheese. I have also added grilled chicken breast to make it a dinner salad.
