So easy and good. I love it this way. I use two bags of Success Jasmine rice(cooks in 8 min. to perfection). Most of the time I use the chopped Romaine, but sometimes spinach. I have also used a big can of chicken breast with the pieces broken up. Add shredded carrot, black olives, and a small tomato chopped. It is best served fresh, but I have found it delicious the next day...just stir it up and serve cold. You could add some crisp-steamed broccoli too. And, if you use chicken, use EVOO, white wine vinegar, and a little yellow mustard all whisked together as the dressing.

Personally I would have given this 4 stars but it didn't go over well with daughter and husband. I did make a few changes. I let the rice cool a little more and didn't mix in the greens. Instead I used a bed of them for the salad. Mixed in tomatoes for husband and myself (daughter hates tomatoes) and added an extra carrot, black olives and cucumbers. Green onions would be good in this as well.

I was surprised at how good this actually is considering how simple the recipe is and I'm not usually a fan of tuna. I used brown rice instead of white rice & since I didn't have any lettuce, I left that out - I also wasn't sure if I would like the lettuce in this recipe. I also added kalamata olives which gave it something extra! I have a bit leftover which I will eat for lunch tomorrow and add some walnuts which I have in my pantry (as suggested). I will definitely make this again - it's so tasty, simple and healthy which is perfect for me. Thanks for posting the recipe!

I can't believe how delicious this simple salad is! The recipe says it doesn't keep well so I kept the tuna mixture separate and refrigerated what I didn't use. I have been eating it cold all weekend. Yum!

Just great! Didn't change a thing...Perfect for dietsrs, diabetics and weight watchers as it has your veggies, carbs, protein and fat. Husband suggested a touch of soya sauce instead of salt......very please. Make sure rice is warm as it absorbs the dressing better..........YES!!!

I used basmati rice, which I prefer and I used a huge handful of spinach instead of the Romaine (again, which I prefer). I used some goat feta, which changed the taste and I might not do again. I found there was really a LOT of rice with 2 cups uncooked. I didn't use it all in the recipe and still found it was a bit much. 1 cup uncooked rice would have been enough.

After trying this recipe, I bought a case of tuna at Costco specifically to make it. Has been an excellent summer dinner and a good use for the rice cooker. I'm adding chickpeas and tomatoes and continue to experiment.

This was better than I thought it would be. I used mixed greens and kept everything separate so it would keep for leftovers. Very simple, healthy and satisfying. I also used half the rice, as others suggested.

WOW! This was so surprisingly good. While I had the rice cooking (brown rice), I made up the lettuce mixture and I was seriously considering starting another meal because it just did not seem appetizing. But, it was delicious! Very quick and easy to make, dirt cheap, and healthy! What a great combination!

This was excellent. I used 1 cup of brown rice and left the other ingredients the same, and it was lunch and dinner for myself and my husband. The romaine held up well and it was as good cold as it was warm. Thank you so much, it will be a regular in this house!

Delicious! I made this twice over the weekend - so good! I only made two small changes, brown rice rather than white, and a touch of sesame oil in the dressing. The sesame oil, combined with the vinegar almost gave it a sushi-like taste. OK, that's a bit of a stretch, but much less expensive, and it may satisfy a sushi craving! Thank you!

Very easy and super yummy. *Update* I crave this salad. I probably make it at least once per week. Only use 2 cups of cooked rice. My latest trial was to use quick cooking barley in place of the rice. It turned out great and seems a little more hearty and healthy with the barley.

The first night I made this, I thought it was awful. I think I just didn't like the hot rice with the vinaigrette. But, I didn't want to throw it out, and it was incredible served cold the next day! Of course by that time the lettuce was wilted, so next time I would leave the lettuce out and add more veggies--celery (which was great this time), tomatoes, cucumber. I couldn't get enough of it, but only when it was served chilled without the lettuce (or maybe add the lettuce right before serving).

This is a nice, quick to make dinner. I really like it and find it keeps well for the next day. I used less dressing the second time I made it and liked it better. My husband it not so keen on this one but that is down to personal taste. I have thought about using Green bell pepper finely diced instead of the lettuce but I haven't tried it yet.

Absolutely love it. Very quick and easy. Depending on my mood I will use spinach instead of salad as suggested and I tend to use alot more greens. Also sometimes use brown rice.
