Rocky Mountain Grilled Shrimp

Ingredients

  • 2 pounds unpeeled jumbo fresh shrimp
  • 1/2 cup lime juice
  • 1/3 cup olive oil
  • 2 tablespoons chopped fresh cilantro
  • 1 clove garlic, minced
  • 1 jalapeno pepper, seeded and chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions

  1. PEEL shrimp, leaving tails intact, and devein, if desired. Combine lime juice and remaining ingredients; pour over shrimp.
  2. COVER and chill 2 hours. Remove shrimp, discarding marinade. Thread shrimp on skewers.
  3. GRILL, without grill lid, over medium-hot coals (350 to 400 degrees) 3 minutes on each side or until done.

Great lime flavor. Don't marinate too long though or the acid will cook the shrimp.
