I used the veggies I had on hand ~ red bell pepper, yellow onion, broccoli, cauliflower, zucchini, yellow squash. Delicious!

This is really an impressive platter (or plate in my case) and I don't know why I haven't made this sooner since I always seem to have an array of appropriate vegetables in the fridge, particularly peppers. How easy and gorgeous would this be for your backyard cook-out? For the Italian dressing I just used a simple vinaigrette of olive oil, lemon juice, salt and pepper. I used a minimal amount of fresh herbs. Simple preparation - once it's in the oven you can just forget it while you tend to other things.

The missing ingredient is garlic. Throw in some fresh garlic, sliced, diced, or whole. I think it makes it perfect.

Easy and Delicious. I blanched the green beans for 2 minutes and quickly cooled in cold water. All ingredients into an aluminum foil pan and seasoned exactly as written and put on the grill covered, stir a couple times. I did on grill because I had an eye of beef roast in oven.
