This is one of my family favorites. I've used dried spices and it turned out fine, you just have to use a lot less. I've added carrots and zucchini (toward the end) and they make a great complement as well.

This was absolutely delicious! The only thing I would change next time is to throw certain veggies (broccoli & whatnot), in later. The broccoli burnt a bit and was a little mushy.

Good....nothing crazy amazing but pretty good. I didn't use squash..instead used carrots. The cooking time was a lot longer. I think the whole thing took an hour and a half. I added the tender veggies last 15 minutes.

Made this a few times now both as called for and then with what I had. Both ways are wonderful and super easy!! Either fresh/dry herbs work..I cleaned my fridge out and used zucchini, yellow squash, a couple of potatoes, japanese eggplant and asparagus. For good measure I threw in a few whole cloves of garlic and it was wonderful!! Thanks for the recipe

Oh, yum! Great recipe. If you don't have an herb garden, or your grocery budget is tight, dried herbs are just fine. Just remember - use 1 tsp. dried herbs for 1 Tbsp. fresh herbs.

YUM! I am trying to follow a diet requiring more vegetables and this recipes helps fit the bill! It is low sodium. I reduced the oil and omitted and salt and it was perfect. What a great combination of veggies - I have a new favorite. I am making this every Sunday and doubling the recipe to take to work for lunches for the week.

Excellent! I used the veggies I had on hand -- sweet potato, red onion, zucchini, red pepper, and carrot. I also used dried spices instead of fresh. It turned out great.

Great recipe! The balsamic vinegar made it a bit sweeter than I would have liked (along with veggies caramelizing). Next time I'll try red wine vinegar.

I made this dish exactly the way it was written--it's phenomenal! I served it on Christmas day and my entire family raved about it. The simplicity of the ingredients are deceiving; the roasting process completely transforms the taste of the vegetables into sweet, nutty tasting vegetables that you can't wait to make again. The only problem is, there just wasn't enough!

This is a great recipe. I've made it with fresh herbs and also dried herbs. Fresh is best, but if you don't have them, don't let that stop you from making this side dish. I had zucchini that I added and it added green to the already colorful dish. I'm making it again tonight with extra to cut up to fill omelets tomorrow morning.

I threw this together one day with whatever veg I had on hand (white potato, sweet potato, garlic, carrots, peppers and onion)and it turned out great. One thing I learned, roast hearty veg first and add peppers and onions halfway thru. Husband asked for it again.

This smelled delicious, tasted above average but not awesome. I think to get the taste to match the amazing smell I need to double the sauce (vinegar,oil,herbs). Trader Joe's makes a roasted balsamic vinegar veggie mix sold in their frozen aisle that smells almost identical to how this recipe smelled - I just wish this tasted as flavorful as TJ's mix. It's almost there though, I am going to try this again next week just upping the sauce and I'll report back.

I served this on New Year's Eve to 15 people. Everyone loved it. I marinated the vegtables in the oil, vineger and spices a few hours before cooking. I am going to keep this recipe as one of my standard servings.

I was a little disappointed in this recipe. I followed the recipe exactly. After cooking, the butternut squash and the sweet potato looked the same, so it was confusing to eat. I didn't care for the red pepper flavor. I am going to try it again with alterations.

Good starting recipe, but I added more vinegar, salt, peper, and spices. Red Wine vinegar works well with this.
