Roasted Sweet Potatoes with Cinnamon Pecan Crunch

  1. Preheat oven to 400 degrees F. Mix 1/4 cup of the brown sugar, orange juice, vanilla, 1/2 teaspoon each of the cinnamon and ginger, and salt in large bowl. Add sweet potatoes; toss to coat well. Spoon into 13x9-inch baking dish. Sprinkle evenly with cranberries. Dot with 2 tablespoons of the butter. Cover with foil. Bake 30 minutes.
  2. Meanwhile, mix flour, remaining 1/2 cup brown sugar and remaining 1 teaspoon each cinnamon and ginger in medium bowl. Cut in remaining 4 tablespoons butter with a fork until coarse crumbs form. Stir in pecans. Remove sweet potatoes from oven and stir gently. Sprinkle evenly with pecan topping.
  3. Bake, uncovered, 25 to 30 minutes longer or until sweet potatoes are tender and topping is lightly browned.

I came across this recipe as I was looking for a unique sweet potatoe casserole recipe to take to our church Harvest Supper the following day. I was surely glad I found it. I received many comments that it was delicious--even one that said she could eat it as dessert. The cranberries added a nice "fruity" taste, and the pecans a tasty crunch. I even added some coconut to the topping for even a little more texture and taste. My family's only disappointment was that we only had one small serving left to bring home. If you want to cut down the sugar a bit, I don't think you'd lose a thing as the potatoes are naturally sweet. This will become a holiday tradition in our family.

I was never a fan of the candied sweet potatoes we always had for thanksgiving dinner or the mushy mashed casserole from canned potatoes. Always found them to be too rich to go with the other traditional dishes. This is the perfect recipe. Fresh sweet potato taste and very flavorful, without too much butter or sugar. Made it last year. Everyone loved it and requested it again

This was exactly what I was looking for with the yams in chunks not puréed and skipping the marshmallows. Next time I would do less topping but it was delish and everyone loved it.

Made these on a whim to add to heist as dinner last year and my family RAVED about it! It's the dish they always ask me to bring now. I made mine with fresh cranberries and walnuts and it was delicious!

This was sooooo good. I don't even like sweet potatoes and this is the only way I want to eat them. This is my first review on all recipes and I've been using this website for years. I just had to review it. My son hasn't eaten sweet potatoes since he was a baby.....This recipe, he asked for more and loved it too.

I also was looking for a recipe with chunked potatoes and not mashed. I made this recipe for Thanksgiving and everyone raved about them. Will be making them again in a few days for Christmas dinner. Very delicious!
