Roasted Red Pepper Yogurt Dip

"This healthy and cool summer dip is made with roasted peppers, green chiles, garlic, and yogurt. Try this instead of salsa or hummus when you need a fun dip for a quick snack or party treat."

Original Recipe Yield 2 cups
 

Ingredients

  • 1 (12 ounce) jar roasted red peppers, drained
  • 2 (8 ounce) containers low-fat plain yogurt
  • 1 (4 ounce) can green chilies, drained
  • 1 clove garlic, minced

Directions

  1. Puree red peppers in food processor or blender; drain again. Add remaining ingredients; mix until blended and refrigerate. Serve with assorted cut vegetables or pita wedges.

Not very good. I had to add chipotle and cumin to give it flavor. The yogurt is a weird flavor...

This came out really soupy. Next time I might use less yogurt - I couldn't find 8oz containers...
