This dish was very good. I have never made anything with sauerkraut before, but wanted to try it. I didn't measure my ingredients, just sprinkled and rubbed on the sage and garlic powder all over the tendeloin. I also added a few cloves of fresh garlic. I chopped the apple and used dried onion flakes since I was out of fresh. My tenderloin was done just under two hours, but I still had a lot of time before dinner, so I decreased the oven temp to 300 and let it cook another hour longer. When I took it out of the oven, the meat nearly fell apart, it was so tender and juicy. (I did not drain the kraut, but added all the juice in with the meat.)I felt that the kraut was very good, but would have liked it to be a bit sweeter. I will add more brown sugar next time. My husband and I both enjoyed it, but the kids decided sauerkraut is not on their favorites list. I don't blame them, I don't think I liked it as a kid either. All in all a great recipe I will try again. Thanks!
