Followed the recipe with the exception that I used parchment paper on the cookie sheet. Best roasted red potatoes I've made, and I've tried several other recipes. I think the temperature, using the low oven rack, using a cookie sheet, checking after 20 minutes, etc., made them just the right texture: crispy outside, puffy inside - not mushy or soggy!
