This is the third review that I've written tonight and I feel like I'm one of those crazy cooks who never follows any recipe. I would have LOVED to follow this recipe to a T but didn't have red potatoes..so I just used the concept for this with what I had. I just thought some folks might be interested in how it turned out. I used two large baking potatoes. I peeled and cubed them in large chunks. I them peeled two Australian carrots (they are SO sweet) and also cut them in big chunks. Tossed with the oil, sea salt and fresh pepper and then baked for about one hour. They turned out REALLY nice...great compliment to the Awesome Slow Cooker Pot Roast we also had.

I thought these were great. Followed others suggestions to add garlic and spice. I only added minced garlic and some minced onion, since I was serving with the Roast Leg of Lamb with Rosemary from this site. Otherwise, I would have added rosemary too. They were gobbled up.

Very good and so easy. I think you can reduce the oil to save cals. Loved how they browned...I always wondered how to make good roasted red potatoes and I'm glad I found this recipe! Feel free to add other spices.

Great and easy! Added some fresh parsley, rosemary, and chives to the olive oil which I put in a ziplock bag and then mixed with the potatoes. Cooked for about 22 minutes. they were perfect.

YUMMMM...the only things i did differently was change the temp and cooking time because i was baking something else at the same time. i also added something called Garlic Garlic that I got from Tastefully Simple. will definitely make this again!

Very good! I didn't add the garlic like others suggested because I didn't read the suggestions until after I had them in the oven...I definitely think that would have added alot more flavor! I will do that next time!

This was good. I cut each of the red potatoes into six pieces, more like a breakfast potato. It's a good addition to one of those breakfast for dinner days. There wasn't a ton of flavor, though, and the skin turned out soggy.

This has become a family favorite at our house! It's easy and delicious. Along with salt, pepper and olive oil, I always sprinkle these potatoes with parmesan cheese. I just use Kraft in a can, but fresh would be even better. The cheese really adds texture and a little more flavor.

Yummy, delicious! Very simple and easy recipe. One word of advice - eat it soon after you take it out of the oven or don't cook it too much in advance because the potatoes will get very salty the longer it sits around.

This was a simple and delicious recipe. I did not make any modifications to the recipe other than using sea salt in place of table salt. I will make this again and again as these were a huge hit.
