Be sure to heavily season these potatoes! You can use rosemary, garlic, thyme, oregano, or fresh ground pepper to really bring these to life. Adding some chopped onions makes it even more tasty! (: This is a quick side dish to cook at the last minute or if you aren't in the mood to slave over a stove.

The only thing I changed was I used regular potatoes because I didn't have red potatoes on hand. My husband and daughter were fighting over the very last potato. Thank you very much for sharing this recipe. It's was a HUGE hit in our house and we'll be making these often.

So good. I hasten the roasting time by boiling my potatoes for about 10-15 minutes. This was a last minute side for the steaks with bleu cheese. I originally was going to make sweet potato fries but they went bad so I decided to make these. I also added a little bit of melted butter just before they were done and tossed them with a tiny bit more of salt. I could easily eat the entire tray . Thanks for sharing.

So good and easy to make! My "I hate the potato skin" kids even ate seconds! This will make the rotation again...they even asked to have these instead of hash browns for breakfast every Sunday. Thanks for posting!

I've been making these potatoes for months now and I still love them. What I love most about them is how easy they are. I follow the exact directions of the recipe every time I make them and they come out perfect. They're crisp on the outside and soft on the inside and I think after you make them once you'll realize how amazing these potatoes go with nearly any recipe!

I love this simple recipe! Baked at 425 for about 25 minutes and it was perfect. I both quartered and halved the potatoes depending on the size of each one. I also used seasoned salt rather than regular salt and I highly, highly recommend that you try this too! This recipe is very kid friendly.

This is the roased potato recipe I've been looking for! I modified the seasonings and sprinkled the potatoes with rosemary, kosher salt, and lemon pepper--they turned out fantastically and were the hit of our dinner party. The perfect (and flexible) side dish!

The basic roasted red potato - just what i was looking for!! I baked them on a lower temp because i was cooking baked chicken at the same time (Baked Garlic Parmesan Chicken from this site - yummy!!!) they were softer and not so crispy, but i liked them that way!!

This is how I usually make my potatoes. 1/4 olive oil seemed a bit much as my potatoes were swimming in it. Added a little more salt and pepper and also some garlic powder and oregano. Cut potatoes in 1/4's since they were a little bigger and cooking time was about 30 minutes. Crispy on the outside and soft and moist on the inside.

Spray your pan first.... otherwise...Love these. I make them all the time except now I experiment with various spices. Excellent with spicy mustard tossed into the olive oil... such a great flavor especially if the main meat is seasoned similarly. Great dish!
