Roasted Fan-Shaped Potatoes
SUBMITTED BY:
Eunice Stoen
"These wonderful oven-roasted potatoes are very pretty to serve--the partially cut slices spread out in the shape of a fan. Folks at a potluck can easily take as many slices as they want. I especially like these potatoes with ham, roast pork or beef. --Eunice Stoen Decorah, Iowa"

DIRECTIONS
With a sharp knife, slice potatoes thinly but not all the way through, leaving slices attached at the bottom. Place potatoes in a greased shallow baking dish. Sprinkle with salt; brush with 1/4 cup butter. Bake, uncovered, at 425 degrees F for 30 minutes.
Brush potatoes with remaining butter and sprinkle with bread crumbs. Bake 20 minutes longer. Sprinkle with Parmesan cheese. Bake 5-10 minutes more or until potatoes are tender and golden brown.

I did enjoy the potato. It is very easy to make, but the results are great. It depends upon the taste, everybody can add some more spices, but I found the very idea of making potato in this way great. It taste very, very good and looks the same.

I added more butter to the recipe because the potatos seemed dry but other than that it was a new way for us to eat potatos and everyone enjoyed it! For taste I added Lawry's seasoning salt.

I used a crinkle cutter on the potatoes and added rosemary, thyme, oregano & garlic to the parmesan. They turned out more flavorful and the added spices added a bit of color. I also took baby carrots & thin sliced with the crinkle cutter and surrounded the potatoes on the dish with them.

I had the oven going for other cooking projects and decided to make these as well (energy conservation minded, I guess). These potatoes don't have a big flavor, but they do have a ton of eye appeal. I think they're fun to serve and would prepare them again.
