This was my first time buying and preparing fresh beets, so used to canned ones....fresh is so much better and this recipe was excellent and simple. I did use dried rosemary as I didnt have any fresh. These beets were sweet and tender on the inside and slighlty crispy on the outside from roasting. Just delicious, my family really liked these, even my 5 year old! I did use sea salt instead of kosher salt also. Will definately be making these again. Thanks!

Very tasty. Have always thought beets were a bit over prepared, so really liked the simplicity of the recipe. Good both with and without the rosemary.

We love beets and I make this recipe at least once a week because they are delicious hot or cold. I make it as it says in the directions - I didn't use rosemary one time and I really missed the flavor. It doesn't mention it but I do NOT peel the beets before roasting them.

This was delicious just as it is written! Even my husband, who has never eaten my beets in the many times I've tried, ate them and went back for seconds! The skins were soft enough to eat without even noticing. Great recipe! Thanks for sharing!

I followed the recipe as is by putting the beets in foil packets but then I put them on a charcoal grill for 1 hour over indirect heat. They turned out great! I would say they could have even stayed on longer because I liked the pieces that were on the bottom of the foil and caramelized a bit more.

Absolutely delicious; made a beet-hater husband change his mind. After seeing a couple reviews saying something was maybe lacking, I added a crushed garlic clove and some freshly ground pepper before roasting. It was delicious!!

Sooooo good! I made NO changes! And loved them! (ok, I just mixed the beets and the olive oil and salt in a bowl, not the plastic bag). And I did use rosemary - really tasty! Thanks!!
