easy to make but i needed to cook my beets even longer...next time will cheat by either boiling them or putting them in the microave for a bit

absolutely awesome! I cut beets into wedges but otherwise followed directions.. wonderful way to use this season's tastiest vegetable

Delicious! I didnt follow the recipe to teh T (of course...)- didnt have fresh rosemary on hand but not a huge fan of the herb anyway... Just sprinkled with EVOO and salt and roasted. Put ontop of salad with gorgonzola cucumbers green onions and lettuce- sprinkled with bals vinegar and EVOO. YUM!

We bought some beets at the farmers market to try. My husband likes beets but I've never eaten them before. Found this recipe and made it last night. It was great. I could've eaten more beets. The only change I made was adding fresh ground pepper with the salt and dried thyme instead of fresh rosemary. Next time I'll try it with fresh rosemary from my garden. Thanks for a great and easy recipe!

These were delicious! I didn't close the foil over them but left it open, cooking until the slices just started to get crispy around the edges. I finished them with a dash of balsamic vinegar and was thrilled with the results! Next time beets show up in my CSA basket, I won't be confused on how to cook them any more!

Its hard for me to rate this one - as I personally don't like beets. I made this for my daughter that loves beets...she didn't take to them. But that could be because she is used to the boil beets taste. I did try them just to make sure she didn't like them because of an error I made, but they were good (if you like beets). I did use disposable gloves when peeling the beets and cut the beets on a paper plate so that it wouldn't stain my cutting board.

This was okay. Usually my girls eat up beets like there's no tomorrow, but even my toddler who usually devours beets and steals them off of my plate didn't eat much at all. I think the flavor of rosemary was too strong and really played up the earthiness of the beets, and we're used to a sweeter beet taste. The beets came out perfectly done and looked fabulous, but the taste was a little bit of a let-down. Still yummy because they're beets, but not fantastic. If I make the beets this way again, I will not add rosemary.

i'm not sure how to rate this dish, i made it just like the recipe called for - it's not that hard - anyway i smelled something burning and sure enough in about 45 min. they were why well done.

This was a good recipe for beets. I am trying to expand my family's veggies so I purchased some fresh beets. My husband who likes beets really enjoyed them. I did not have fresh rosemary so I will probably try the recipe again with some rosemary. I think I would probably enjoy them more in a salad in the future. So I will probably roast then chill and toss in a green salad.

This is a nice simple recipe. I didn't have fresh rosemary so I put some dried rosemary in water in a small tin foil pouch next to the beets. Next time I'll cook the tops as well. mmmmm good!

I have had these beets about 3 times. They are very good, especially if you like Rosemary. I cut them into similar sizes and cook for about 45 mins. I like my veggies to have a bit of 'bite'.

The most difficult part is peeling the beets. I used thyme instead of rosemary and sea salt instead of kosher (what I had on hand), and they come out perfect. This recipe is definitely a keeper. Thanks for sharing it!

Fresh roasted beets are so great! I followed this as directed using a bit less thyme with a fantastic result. So good served in a salad of mixed greens, goat cheese, and a balsamic vinaigrette! A word of warning about working with beets, of you've got disposable gloves, wear them or you'll have red stained hands for awhile after peeling and slicing the beets. Wear an apron!
