1 pound medium fresh beets, peeled
4 teaspoons olive oil
1/2 teaspoon kosher salt
3 sprigs fresh rosemary

DIRECTIONS
Cut each beet into six wedges; place in a large resealable plastic bag. Add olive oil and salt; seal and shake to coat.
Place a piece of heavy-duty foil (about 12 in. long) in a 15-in. x 10-in. x 1-in. baking pan. Arrange beets on foil and top with rosemary. Fold foil around beet mixture and seal tightly. Bake at 400 degrees F for 1-1/4 to 1-1/2 hours or until beets are tender. Discard rosemary sprigs.
FOOTNOTE
TEST KITCHEN TIP For a milder herb flavor, try using fresh thyme instead of rosemary. You may make the beets a day ahead, then slice and serve cold in a salad.

Fresh roasted beets are so great! I followed this as directed using a bit less thyme with a fantastic result. So good served in a salad of mixed greens, goat cheese, and a balsamic vinaigrette! A word of warning about working with beets, of you've got disposable gloves, wear them or you'll have red stained hands for awhile after peeling and slicing the beets. Wear an apron!

I belong to a local CSA (community supported agriculture) and my last vegetable delivery included beets. I've never been a fan, but wanted to try them. It was the first time I have ever prepared them myself. The recipe was simple, and the beets taste great (for beets)

Roasted beets are delicious! I've been making my fresh beets this way for years and prefer thyme to rosemary and add chopped shallots.

The recipe was a 5 as soon as I sprinkled Balsamic vinegar on it! Amazing! It was totally addicting. I too was surprised at how good Rosemary and Beets went together!

These beets came out great. I didn't use the rosemary (I abhor rosemary), but sprinkled the beets with garlic powder. Both my husband and I liked this dish very much.

I didn't like beets when I was little, but after having my baby, I started to like them. So I grew some in my garden. I had so many I had to find more recipes. My husband who doesn't like beets loved these. They are so sweet and savory.

I have had these beets about 3 times. They are very good, especially if you like Rosemary. I cut them into similar sizes and cook for about 45 mins. I like my veggies to have a bit of 'bite'.

The most difficult part is peeling the beets. I used thyme instead of rosemary and sea salt instead of kosher (what I had on hand), and they come out perfect. This recipe is definitely a keeper. Thanks for sharing it!
