Roasted Asparagus with Herb Goat Cheese

"Roasting veggies always needs revamping every now and then, and I like to experiment by pairing them with different dressings or cheeses. I happened to love goat cheese and had extra on hand. I paired it with asparagus, and they lived happily ever after."

Directions

  1. Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  2. Arrange asparagus, side-by-side, on a baking sheet. Drizzle olive oil over asparagus; season with salt and pepper. Crumble goat cheese over asparagus.
  3. Roast in the preheated oven until cheese is slightly melted and asparagus are tender yet firm to the bite, about 10 minutes.

  • This recipe is quite versatile by changing up the type of cheese: Gorgonzola, blue cheese, and shaved Parmesan are all good substitutes.

I love asparagus and thought the addition of goat cheese would be the perfect complement to the asparagus. The asparagus perfectly cooked crisp tender and had a lot of flavor. I used plain goat cheese because that is what I had in the fridge, but, I think the herb variety would be even better. I will make again, but, I think next time I will add the goat cheese just the last few minutes instead of cooking the entire time. Thanks for the recipe!

This was good, a nice change from always just steaming my fresh asparagus. Like had been suggested, I added the cheese when there were only a few minutes of cooking time left. I wish I'd used less salt as the goat cheese was super salty! It's a nice, simple recipe that tastes great, glad I found it.
