Roasted Asparagus with Balsamic Vinegar

INGREDIENTS

  • 1 1/2 pounds fresh asparagus, trimmed
  • 2 teaspoons olive or canola oil
  • 1/2 teaspoon salt
  • 1/8 teaspoon white pepper
  • 3 tablespoons balsamic vinegar

DIRECTIONS

  1. Place the asparagus in a 13-in. x 9-in. x 2-in. baking dish. Sprinkle with oil, salt and pepper; toss to coat. Bake, uncovered, at 425 degrees F for 10-15 minutes or until lightly browned. Drizzle with vinegar just before serving.

Nutritional Analysis: One serving equals 47 calories, 3 g fat (trace saturated fat), 0 cholesterol, 305 mg sodium, 5 g carbohydrate, 1 g fiber, 2 g protein. Diabetic Exchanges: 1 vegetable, 1/2 fat.

I make a VERY similar recipe that everyone asks for when I serve it. I roll the asparagus in the oil and MINCED GARLIC and then roast as directed. Near the end of roasting sprinkle on the balsamic vinegar and grated parmasean cheese and put under broiler for a few minutes. It is outrageous and pretty!

Great recipe. I only added grated parmesan at the end. Fussy husband loves this one.

This is a great recipe. Super easy. And really good with added garlic.
