Yum, yum. I was pleasantly surprised at how well this recipe turned out. I lifted the skin and rubbed the spices on the meat and on top of the skin. This was incredibly delicious. The onion in the cavity really added a great flavor to the meat. I will make this again and again. Very good.

This was good. This recipe is great if only for the cooking method, I think you can adjust the seasoning based on preference/necessity. I used 2 tsp salt, 2 tsp paprika, 1 tsp thyme, 1 tsp rosemary, and 1 tsp garlip powder for 1 (4 lb)chicken. It was done 4 hours, juicy and with a crunchy skin with no basting, oil or butter. Drippings made great gravy.

Perfect chicken! Easy, tender and moist, just delicious. My guests asked for the recipe. I roasted it with the breasts down for half the time, but other than that I followed the recipe exactly. Yum!

What a delicious entree. I got a whole chicken on sale and tried this recipe out. I didn't have white pepper on hand so I substituted seasoned pepper instead. Then after patting the chicken dry I rubbed room temprature butter on the bird (to help make the spices stick) before sprinkling the spices all over it. Next I added a medium chopped onion and 4 large garlic cloves to the cavity before saran wrapping and refrigerating overnight. Finally I cooked the chicken breast side down...there is no way you will get dry chicken using this recipe. The blend of ingredients is perfect for 1 large bird.

i tried this recipe yesterday and its turned out sooooo yummmmmmmmmmmmmmy like resturent style.My guests love the juice and tendernes of the chicken. I merinate the chicken more then 24 hour .

I love the seasoning in this recipe. I have a chicken roaster with a well in the center and I add a little orange juice to the well. I then season the chicken cavity then put it over the well. I rub butter over the chicken then season liberally with the seasoning. I put red potatoes, carrots, onions and celery around the chicken and let it cook a few hours on 325 degrees

My entire family loves this! I roll up foil and put it on the bottom of the roaster that way the chicken crisps up all the way around!

Oh my. This is simply the best chicken I have ever cooked! I have never rated a recipe on All Recipes until now. I just had to thank Sue for posting this. I am excited for my family to come home and eat this! This is when cooking is fun. How can something so unbelievably easy be so good? I seasoned the chickens last night. I followed the recipe as closely as I could, but didn't have all of the ingredients, so I used Cajun Seasoning, and it turned out incredible. I didn't have any plastic wrap or bags either (what kind of cook am I?!), so I put them in the pan I was roasting them in, and covered tight with 2 layers of foil. For the life of me, I cannot fathom how the previous poster thought this chicken needed more flavor. The flavor and color were both out of this world. I would give this recipe 10 or more stars if I could! My little 5 year old grandson got first dibs on a chicken leg, and he gobbled the whole thing up...the chicken was so tender, all the meat just fell off the bone, so he ate it legless. I will use this recipe over and over again.

Delicious mix of spices. I baked 2 4-pound chickens using the convection setting. My little convection cooking book said to start at 450 degrees for 25 min, then decrease it to 300 degrees for the rest of the time (15 min for every pound). The meat was good, but not falling off of the bone, which is fine by me. Now I have 4 cups of diced cooked chicken for other recipes and some really good chicken broth.

Delicious! It was very juicy, flavorful, and just plain wonderful. I served it with roasted veggies (onions, yellow squash, zucchini, carrots, celery in olive oil and sage), and wild rice. It was a huge success.

This is a super easy, wonderful recipe for chicken. We had it on vacation - served it with Three Cheese Garlic Scalloped Potatoes (from this site), nice green salad, sliced tomatoes, and fresh french bread with butter. YUMMO!!! Great as leftovers too!

You can't cook this chicken wrong. So delicious, I haven't met one person who didn't love the flavor and juiciness of this recipe. I also add butter under and over the skin w/the spices and it's DELICIOUS!! I don't roast chicken any other way.

I LOVE this recipe! We have it at our house every other week or so. I use the leftover chicken for enchiladas, quesadillas, and soups. Super easy to make and tastes delicious!
