Definitely quick and easy! And, that's great when you need something fast. I did add a little more sour cream and baked these on parchment paper. Not bad for last minute - especially when smothered in melted butter...

I used my own recipe for homemade biscuit baking mix and Sprite instead of club soda because that was all I had. These turned out well, nice and fluffy, though a little dry. I think that could have been because my biscuit mix is made with whole wheat flour. Next time I'll know to add more. We ate these spread with Cinnabutter and Cheesy Eggs on the side.

These were very light and very tender - almost cake like. I had to add more sour cream and soda though as they were too dry. I scaled this down and used 1/2 c. biscuit mix (all I had), 2 T sour cream and 2T Sprite lemon lime soda (hey, again it's all I had). This gave me 2 nice sized biscuits and that was supposed to be 2 servings. I consider that 1 serving. Great base recipe it just needs some slight adjustment.
