Good recipe, fairly easy. I boiled my chicken and then shredded it. The water seems like a lot at first but it does boil off. Made exactly as written except I baked mine for about 10 minutes at 350 rather than frying. I like the beans in here, and the cilantro give it a great flavor.

I didn't use all the water called for because that seemed too much. I dissolved the taco seasoning in 1/4 cup of boiling water then tossed it with the chicken,onion and cilantro. I didn't bother with the simmering for ten minutes. I layered the beans instead of stirring them in. I had to use a mexican cheese blend because that is all I had. Didn't bother with the pimento since they don't have any flavor to me. I sprayed the tortillas with cooking spray and deleted the oil. The best part about this recipe is the cilantro and onion. It gives it a nice fresh flavor.

I used ground beef (actually soy crumbles) instead of chicken. Didnt add cilantro either. I chopped up some jalapenos and used red onion instead of green. Soooo good! Serve with sour cream and salsa!

Really I'd like to give this 4 1/2 or even 4 3/4 stars. These were great. I made them as described, just cut a some of the taco seasoning since I was serving it to my little kids and they are very wary of spice. I also skipped the pimientos since I didn't have any. Instead of oil in the skillet, I just used cooking spray. The cilantro and green onion make it taste very fresh. I served mine with salsa and sour cream. Next time I'll probably use the full amount of taco seasoning to get the full flavor. Thanks for sharing this recipe!

I had leftover london broil which, according to my family, worked out great with this recipe. I added sliced bell peppers and eliminated the cilantro. Due to the high salt content, I make my own taco seasoning and instead of frying the quesadillas in the pan, I lightly oiled a baking sheet, placed them in the oven and flipped once the underside was crispy. My family loved this Shawn and thank you so much!!
