I love this soup, but I made some small changes to it. First off, I use more tomatoes (7 or 5 really big ones) juice (6-7 cups), and basil (about 20). I use the same amount of butter and cream as the original recipe. I add 3 tbsp sugar, I use 1 tsp kosher salt, and pepper to taste. I cook this all together, as opposed to seasoning it when it's done. In my opinion the flavor is much better this way. I don't peal or seed the tomatoes either. Just dice it. Everyone who's had this tomato soup, just loves it! My hubby absolutely loves it with grilled cheese sandwich. This is definitely a keeper.
