not good. by the time i was adding the squash, almost all the broth had evaporated and I had to add some water. edible, but not worth making again.

This is one recipe that really doesn't need any revisions--it would be delicious exactly as written. However, I did add garlic with the carrots and onion, cut down on the salt (since I didn't have low-sodium broth), upped the pepper, and added a couple dashes of cajun seasoning and a diced tomato. These are based on personal preferences--we love garlic and spice. Mixed some shredded mozzarella cheese in too but I don't think it really needed it. Served with crab-stuffed salmon. Boyfriend LOVED it--scraped his plate completely clean and started thinking up other meals this would be good with as well.

I followed recipe - but doubled rice & broth & added a pinch of saffron. It took a bit longer for the veggies to become soft. Tasted great & have lots of leftovers. Great recipe to use up all those extra garden veggies.

My family has a new favorite. One of our guests asked for the recipe immediately. I did have to add a tsp or so more oil as there are a lot of veges in this recipe. Very pretty with all the carrots. Very buttery without all the butter. Loved it.

This is delicious! The second time I made this, I chopped up some red bell pepper and sauteed it with the carrots and onion, and this worked very well. My family loved this recipe.

This had unbelievable buttery flavor! If I had not prepared it myself, I never would have believed that it was cooked with merely one tablespoon of butter. I used brown rice and added a dash of onion and garlic powder. Can't wait to have this again!
