This is an AMAZING alternative to a normal quiche! In the past two months I have made this quiche about 6 times! I have given this recipe only 4 stars because I have changed it quite a bit. I've made it with curry, but it tastes much better without it. Instead of evaporated milk, I use cottage cheese. And I have tossed in diced ham, onions, mushrooms, bell pepper, and anything else I have for variety, since I make it so often. I completely suggest making this! It's SO worth it!

Pros: Gluten-free. Nutritious. Easy. Inexpensive. Cons: Not that tasty. The curry in the crust is the best part. I'm just not sure if I'd make this again or not.

We enjoyed this recipe. I didn't have any spinach, but it would be even better with it. I especially like the brown rice crust. It is perfect for our gluten free diet. Thanks for a great recipe!
