The thick egg custard filling for this pie is lovely. First egg yolks are blended with flour, sugar and lots of scaled milk, and then stiffly beaten egg whites are gently folded in. This yummy custard is then spooned over diced rhubarb that 's piled in the bottom of a pastry shell. Baked until it 's set.

Rhubarb Custard Pie I

This is a double-crust pie that can be made with either fresh or frozen rhubarb. The rhubarb is cut into nice-sized chunks and folded into a mixture of sugar, beaten egg yolk and flour. The filling is then arranged in a prepared crust, topped with another, and baked until golden. Serve it warm with scoops of vanilla bean ice cream.

This recipe makes a 10-inch pie that 's packed with rhubarb and sugar. The rhubarb is diced, piled into a prepared crust and covered with a vanilla custard mixture. The top crust is popped on and the pie is baked in a hot oven for an hour.
