Very easy and tasted great! May cut back a bit of the sugar next time, and followed other advice by adding a bit more rhubarb.

My fiance and I really enjoyed the cake. I only used one cup of rhubarb because that is all I had. The cake turned out wonderful. I only had to cook it 20 min since I was short on rhubarb. Also, I only sprinkled a little bit of cinnamon and sugar on top. The cake was really light and we had seconds. Very easy to make!

My family and I love this recipe. As a matter of fact, they loved it so much that the serving slices didn't quite make it to 9 servings. I followed the recipe step by step, without making any changes; it came out perfect! If you love rhubarb, then you must try this recipe!

WOW! I only had 2 cups of rhubarb, but had some blueberries, so threw in 1 cup of those. Cut the final sugar to 3/4 cup since the blueberries were very sweet. It was FANTASTIC! Just finished the first serving and want more! What a great recipe, can see trying it with other fruit! The cake is great with the crunchy top. Inside not quite 'pudding' as a bit runny, but certainly did not take away any from the flavor or presentation. Would not change a thing next time! Just love it!! Thanks for a great recipe!

What can I say that has not been said? This is excellent. Will be making again. I am baking this recipe right now trying it with raspberries since we have so many raspberry plants. Will let you know how it turns out.

Loved this cake, I made it with splenda for baking in the cake part, and for the topping, I used half sugar and half splenda. Also used 4 cups of rhubarb as I have a big rhubarb patch in my garden. I served it with cool whip. I'll be making this one often. Thanks for posting it Mindy

This is amazing! The only change I made was to add an extra cup of rhubarb. Oh, and a little extra cinnamon! I love how it all comes together while it bakes and the crunchy top. Superb served warm with some vanilla ice cream! Highly recommend!!!

This was SO tasty! Even husband who "doesnt like rhubarb" ate almost the whole thing! I made a few changes.. I didnt have 3 cups- only 2 Cups of rhubarb. Added about 8 large strawberries cut up.. Halved everyting else but the water at the end which I think is what made it very very hard to scoop up. I am getting more rhubarb today to make this again- it lasted a mere 15 minutes in my house. Great with some whipped cream on it!! DANGEROUS>>

We really loved this recipe. Just the right amount of sweetness and tartness. I did, however use 4 cups of rhubarb. I think it needed that much. I might try it with some strawberries next time. Mmmmm.....strawberry/rhubarb. Great recipe.

This was wonderful!! I had frozen rhubarb in my freezer from this past summer. I had 4 cups of rhubarb and it didn't even come close to covering the bottom of the pan. I added 1 cup of well drained crushed pineapple. I did everything the same as the recipe called for. It came out wonderful and was a big hit. I will make this again this summer for family gatherings.

Excellent recipe. I used 4 cups of rhubarb also as am trying to use up my abundant crop. I think it is better with more rhubarb in it. Thanks for sharing.

My 9 year old son and I made this for a quick dessert. It was delicious. We used 4 cups of rhubarb because we have a abundance that we are trying to use up. Very quick and easy to prepare. Will definetly make again.
