I used 8 cups rhubarb instead of the 3 as the recipe calls for, and I will use more next time I make it. 3 cups would barely cover the bottom of the pan if it would at all.

Most people turn up their nose at rhubarb anything! I have grown up with it and now so have my kids and they love it!! For a twist add some strawberries to it and it is truely amazing!

Mmmmmmmm delicious. I added a can of pie cherries to the rhubarb mixture! Everyone loved it and it was sooo easy! I also used more rhubarb than the original recipe called for.
