Lentil Soup I

Two kinds of lentils and mashed potatoes are used in this tasty and economical soup. Whole cloves are added during cooking, for extra flavor.. This soup can easily be made vegetarian by substituting vegetable stock for the chicken soup base.

Hearty Lentil Soup II

This is a rich, satisfying vegetarian soup, wonderful for cold winter nights. Serve with crusty bread. For variety, you can also add some sliced vegetarian sausage or bacon substitute towards the end of cooking. Garnish with chopped fresh coriander OR parsley.

Lentils are added to sauteed onions, carrots and celery. Lots of crushed tomatoes and water are added, and the magic begins. An hour later the soup is thick and wonderful and ready for a bit of shredded fresh spinach and a splash of vinegar.

Winter Lentil Vegetable Soup

This soup has very little fat, is cheap and easy to make and delicious. Our family practically lives on it in the winter and I usually double the recipe. Sprinkle grated cheddar on top if you wish. If you can't hang around long enough for this to cook, put it in a slow cooker.

Fakes (pronounced 'Fah-kehs') is a staple in the Greek kitchen, and an especially filling and healthy meal. It is traditionally served with a drizzle of olive oil and lots of vinegar. Though the vinegar is of course optional, try it--it lifts the lentils and adds another dimension of flavor!

To make this easy recipe you need only olive oil, lentils, beef broth, an onion, tomato sauce, and Italian herbs. Ten minutes to put together, forty-five minutes to simmer, and voila! Soup is ready.
