INGREDIENTS
1 cup butter or margarine, softened
1 cup sugar
2 tablespoons milk
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
3/4 cup chopped red and green candied cherries
1/2 cup finely chopped pecans

DIRECTIONS
In a mixing bowl, cream butter and sugar until fluffy. Add milk and vanilla; mix well. Add flour. Fold in the cherries and pecans. Shape dough into two 8-in. x 2-in. rolls; wrap in waxed paper and freeze.
To bake, unwrap and let stand at room temperature for about 10 minutes. Cut into 1/4-in. slices. Place 2 in. apart on ungreased baking sheets. Bake at 375 degrees F for 10-12 minutes or until lightly browned. Cool on wire racks.

I made these for a friend who likes to just eat the cookie dough, since this recipe does not have eggs in it. I also used chocolate chips instead of cherries. The dough was delicious, and tasted just like the dough in cookie dough ice cream. However, once baked, the cookies were okay, but it tasted better as just dough.

These were really easy and really delicious. We left out the cherries because we don't like them much and used almonds in place of pecans, since that's what we had in the cupboard. Tip - I discovered it pays to be patient... warm from the oven they are nothing special, but once cool they are crisp, buttery and delicious.

Sweet with being too sweet. Simple to make. My husband and I both enjoyed them. Freezing the dough was very handy. Unfortunately, candied cherries aren't readily available after the holiday season, so the next time around, I plan to stock up and keep them in the freeer so I can make these during the year. Thanks Dottie!
