Very good. I made them for my boyfriend and he finished the entire pan in one night! I made it again two days later with corn tortillas, a packet of taco seasoning and omitted the cottage cheese. They were even better, but both versions are delicious.

Just made this for my boyfriend and I, and we both really liked it! I did make a few changes though: For the sauce, I just used fresh minced onions rather than dry. (Next time, I will probably increase the entire sauce recipe by half, because it is delicious and I like my enchiladas extra saucy.) For the filling, I omitted the cottage cheese, substituted Chihuahua cheese for the cheddar, and added a can of diced tomatoes and half a jalapeno, finely chopped. (The filling turned out spicy, but not too spicy.) Finally, I used corn tortillas rather than flour ones, which I highly recommend for great texture, flavor, and less calories! Simply heat the corn tortillas on the skillet with a bit of oil or butter until they are soft and pliable before dipping in the sauce.

These were soooo delicious! I actually add 1/2 pound lean ground beef, browned and a 1/2 pound lean ground turkey, browned to the bean mixture....makes the hubby happier. I've tried with corn tortillas and flour tortillas.....flour turns out much better as the corn tortillas tend to break when attempting to roll up. Definitely a keeper, I've already made this several times now.

Yummy! I fried the corn tortillas as another reviewer had suggested, used some left over home made black beans & rice instead of cottage cheese. Will add a little cayenne next time for a little kick!

I was not precise with the amount of beans/cheese - but this was excellent. I think it may need more of the sauce part though.

Love them :) I use "the best red sauce" recipe found on this site with them....yummy! some light sour cream and diced onion and you would never know you are eating healther. My family was completly unaware :)

I really liked these! I was scared the sauce wouldn't turn out but it was good!! I subbed sour cream for the cottage cheese and forgot to add onion, I was going to use chopped onion, but kept everything else the same. I will make these again. I only had 6 tortillas and that was the perfect amount. I did cook the tortillas over the open flame on the stove before dipping in the sauce. Great meatless meal!! Served with black bean pasta from this site.
