INGREDIENTS

  • 3 (3 ounce) packages strawberry flavored gelatin mix
  • 9 cups boiling water
  • 4 cups sugar
  • 9 cups water
  • 2 (46 fluid ounce) cans pineapple juice
  • 2 cups lemon juice
  • 4 (2 liter) bottles ginger ale

DIRECTIONS

  1. In a large bowl, whisk together the strawberry gelatin mix and 9 cups of boiling water. Set aside. In a large pot, bring the remaining 9 cups of water to a boil. Stir in the sugar until dissolved. Pour the sugar water into the gelatin water, then stir in the pineapple juice and lemon juice, mixing well. Pour into four 1-gallon size resealable freezer bags, or pretty Bundt pans to freeze.
  2. To make punch, place one of the frozen portions into a punch bowl, and pour 1 bottle of ginger ale over.

I love this punch recipe, and so do my friends and family. I use it every year at my Christmas open house. Now I print off copies of the recipe ahead of time, because someone always asks for it.

Very good, but a little too sweet for my taste. I'm not sure why the recipe says to mix the jello/water and sugar/water separately - I did it all at the same time, and it was fine. This tastes really good with cherry jello and pineapple juice, lemon jello and orange juice, and orange jello and mango juice. It's kinda fun experimenting. Thanks!

I made this with 7up instead of Ginger Ale. Each zip lock bag holds about 7 cups -- if you divide the full recipe evenly before freezing. I served it to High School Seniors. Everyone, including the boys, couldn't get enough - really yummy. You know when HS boys are asking for it, it has to be good:) Try it.
